The Bryn Awel Hotel is now able to offer a wide variety of food thanks to it's guest chefs

The Bryn Awel Hotel has set up a truly international flavour in its two restaurants in the town with chefs from North, South, East and West joining forces in the kitchen.

Over the last 12 months Head Chef Sue Wedge from Chester has been joined by Matej Birosik from Poprad in Slovakia, Dtoi Harvey from the central region of Thailand and most recently Apichard Khontad who originally hails from Bangkok.

The four chefs have been creating their traditional cuisine in the Bryn Awel's kitchen, which enables guests to sample the tastiest dishes from home and abroad at the hotel's two restaurants - the Bistro and the Lemon Grass.

Head chef Sue Wedge said: "It's fantastic that we're able to offer customers so much variety in our menus now. The chef's different backgrounds allow us to take the best from each of their countries and experiences to offer diners something different every time they come and that seems to be working really well."

Apichard, who worked as a chef in the Bangkok Marriott Hotel before coming to the UK, has recently extended the Lemon Grass menu to keep up with demand for the restaurant which is now open for an extra 3 days a week from Tuesday to Saturday.

Apichard, who goes by the nickname 'Peter', said: "I worked in the Hilton and Marriott hotels in Bangkok before coming to the UK in 2001, where I worked in Oxfordshire before moving to Tim Tom Sum in London and then on to the Siam Orchard in Oldham. I'm really enjoying my time here and since being at the Lemon Grass I have extended the menu to include all the most popular dishes from West, East and South Thailand which seems to be going really well."
